Rey's knowledge about the Millennium Falcon is explained in the film's novelization: She used to sneak into the ships on the junkyard at night, including the Falcon, and gathered a lot of information about them. She learned to fly with a simulator that she installed on a self-built computer, and trained so extensively until even the most challenging tasks were no problem for her.
