Terence Stamp does the very first part of the stunt when his character is hit by the car. That's him turning and being struck by the car's bonnet but the bonnet is a prop made of foam. The cut to a POV from inside the cab is obviously an actual stunt man. That's also not Stamp lying on the ground all bloodied, "because I just couldn't bring myself to make 82-year-old Terence Stamp lie in the street in the middle of Soho." Edgar Wright stated.
