The original script and the movie novelization provide an explanation as to why Imhotep's corpse is still "juicy" after thousands of years: the scarabs thrown in his sarcophagus are considered sacred, and by eating them, Imhotep is condemned to live forever. Likewise, as the High Priest, Imhotep is considered a sacred man, and by eating him, the scarabs are condemned to live forever. The intention is that both the scarabs and Imhotep would be condemned to live forever, eating each other for eternity.
