(at around 1h 8 mins) John Ratzenberger has voiced in every single Pixar movie to date (22). He does 'not' have a credit in Soul, nor does he do a voice. However, he 'is' in the movie, as a character likeness. In the scene where Joe is running through the subway, after going through the turnstiles, he runs into/past a man with a white business shirt and red tie that turns and watches him. That has been confirmed to be a likeness created of John Ratzenberger to keep his continued Pixar appearances.
