The card game Gondorff and Hooker are playing after Hooker's meeting with the FBI is Cribbage. A Cribbage hand is played to 31. When a player (Hooker in this case) does not have any cards in his hand that will add up to 31 he passes by saying "Go". The score is kept on a board with pegs and a traditional game is played to 121.
