In the comics, Bruce originally transformed into the Hulk at night, similar to a werewolf. As a nod to that, Bruce's first two Hulk transformations in this film happened at night. Likewise, in L'incredibile Hulk (2008), Bruce's first Hulk transformation happened at night.
