Although Kate's gray dress was intentionally changed by the costume designer to be different from the modern version, it also acquires a train that wasn't present in the modern dress. Since neither Leopold's nor Stuart's clothing changed with time travel, it is illogical for Kate's dress to change mysteriously and magically just because she went back in time.
