When agent Agent Smith is sitting with Cypher at the fancy restaurant, Cypher is eating meat. He says, "you know, I know this steak doesn't exist..." When they show the plate with the meat it is not a steak, it is a roast. Cypher would have ordered the dinner, so he would have known he was ordering a roast. And given the expensive restaurant they are in it would be a rib roast or a top round roast.
