(at around 1h 55 mins) In the steel mill, T-1000 asks Sarah to call John although he could easily shut her mouth and imitate Sarah's voice. However, earlier in the movie (at around 36 mins), the T-1000 attempted to impersonate John's foster mother and John saw through the disguise, therefore the T-1000 would rather use the real thing than attempt an imperfect impersonation. It is also explained in a deleted scene that the T-1000's mimicking abilities were hindered by the nitrogen.
