When inside the shack, Mattie Ross told the bandit to wash his hands before eating, to prevent being infected by germs. The movie is set in 1880, and while germ theory was becoming known among the scientific community in Europe based on Louis Pasteur's work in the 1850s, the concept of washing hands to prevent the spread of germs was only accepted by the medical community in the 1890s.
