Beth agrees to cooperate with Cox and his gang, under the impression they will all be freed once the heist is completed. However, by openly executing Willy in front of Jack and Beth, Cox has knowingly made them witnesses of a homicide, and has no reason to presume they'll keep quiet on the matter. Realizing they'll be killed at that point regardless, the family no longer has any reason to cooperate with Cox or his men.In fact, just by seeing kidnappers' faces, they know they won't be left alive. Jack himself tells that to his wife. That's why they try to escape so many times, because they know cooperating isn't an option. They just pretend to be cooperating to earn time so they can escape.
