Dyson is willing to sacrifice his career (and ultimately his life) to destroy the pieces of the original Terminator and all the documentation associated with them and their reconstruction. But even in 1991 a company like Cyberdyne would have had all or most of their data backed up remotely, so Dyson would have known his actions (beyond destroying the chip and arm) were futile.
