(at around 2h) The filmmakers went to great lengths to express the fact that both Terminators are essentially machines. For example, Robert Patrick went through extensive training before production, to be able to run with a straight face, without showing any signs of fatigue when he chases John Connor. However, in its final confrontation with Sarah Connor, the T-1000 acts exactly the way a human would: he waves its finger and shakes its head in a slow, sadistic manner. (Not out of necessity to blend in etc., they were alone in that scene)Although this could be interpreted as artistic/creative liberty for that particular scene, it's still out of character for a machine to display this type of human behavior. However, the T-800 is shown to learn and adopt human behavior by this point in the film, so it is reasonable to infer that the much more advanced T-1000 has done the same.
