If Newton Crosby had indeed quit NOVA, he would not have still been driving a company van at the end of the movie. As a terminated employee, he would have had to report to the security department, which would have confiscated all the company property. However, he is never shown to quit formally. He and Stephanie are only shown to take the van and drive away. There is no indication that they stopped anywhere on the way. Yes, it could be argued that they technically stole the van and might have been in trouble for it later, but that's a completely different story.
