In Vol. 1, while speaking with Hattori Hanzo, Beatrix only knows a few words of Japanese. Yet in Vol. 2, while speaking with Pai Mei - several years before ever meeting Hanzo - she claims to know the language very well. It's possible that four years in a coma caused her to forget, but she didn't forget how to speak English.
