There are two Infinity Stones on Asgard during the Time Heist: the Aether (Reality Stone) embedded in Jane Foster, and the Tesseract (Space Stone) in the vault. Given the volatile situation at the Battle of New York, it would have been much simpler to acquire the Tesseract from the vault. However given Thor's state of mind during the planning he's probably forgotten about the Tesseract being on Asgard. Plus it seemed easier to acquire three stones at once instead of two. Also who knows what kind of security Odin had for the Vault after the events of the first Thor film. In addition, as it is shown in the first Thor film, the Allfather Odin is able to sense intruders in his vault.
